Are you running a thermostat?
Some people get it in their heads to remove the thermostat which is completely wrong.
The thermostat is a paramount part of the cooling system as it regulates coolant pressure in the head and mitigates against stagnant pockets which boil and causes trapped gas. Then when coolant tries to cool it down, it immediately evaporates repeating the cycle.
But they have a life expectancy and do fail eventually. So people tend to remove them and say that they will allow extra time for the engine to warm up, but that's only part of their purpose.

Yep, I run a thermostat. I don’t know how old it is but I have tested it to make sure it opens before 100c. I know that temperature is important to an engine and running without a stat will mean the engine hardly ever comes to a decent temperature. It’s kinda why I’m asking where the temp gauge usually pegs at? Half way, 3/4?...
It’s the first bike I’ve had with LC and I’m running in a total rebuild while trying to undo previous owners carb tuning (15 registered owners! I’m guessing more than one thought ‘more was merrier’ with the jetting) so I’m a little bit anal about getting it up to temp and ‘stuff’. Plus I can’t ride anywhere cause one pull could undo all my hard work...Really I just want to know where the normal running temperature pegs in for my own peace of mind. If there is such a place ...
