@AndyJay It all depends on which sort of riding you do and how you like your forks to feel? Some riders like a softer springier feel with more compression to soak up the bumps more. While others like a stiffer feel for better cornering on tarmac. Adjusting the oil weight will only increase or decrease the time it takes for the oil to be pushed through the valves in the forks, thus giving a faster or slower compression. Search the web for some guides, but its a personal thing and ultimately something you will need to experiment with until you find your perfect set-up.
Swapping the springs out for some progressive ones will also make the forks much better too. But again it's all down to personal taste, rider weight, riding styles etc. and what works for one rider may not work for another. I would just put a 15W in and go from there, as a small jump from 10-15W would not be extremely noticeable, as say a jump from 10-30W would be much more noticeable.
